High Protein Dark Chocolate Peanut Butter Pretzels

A chocolate covered pretzel (or two) a day has been proven (by me) to fight the most intense whiffs of daily BLAHness ;) Now thats a research paper I want to read....


These chocolate PB covered pretzels are a seriously easy snack for when you need some bite sized sweet motivation.


aaand, they're ready in 5 minutes


aaand, they're made with relatively clean ingredients that can be modified to your liking

(making this recipe versatile for all of your taste and macronutrient preferences*)



Ingredients

  • About 20 Medium Sized Pretzels/ Pretzel Chips

  • 1 1/2 Cup Unsweetened Vanilla Silk Coconut Yogurt (or sub regular yogurt)

  • 1 Cup Dark Chocolate Chips, Melted

  • 1tbsp Peanut Butter

  • 1tbsp Coconut Oil

  • Almond Milk, Dash



Directions

Line a baking sheet with parchment paper. Scoop the yogurt into a large bowl. Coat each pretzel in yogurt (ratio of pretzel covered is up to you) and place on lined baking sheet. Flash freeze the yogurt covered pretzels for 15 mins. Melt the coconut oil, dark chocolate, almond milk and peanut butter in a saucepan (about 2 mins, stir frequently, don’t burn!). Let rest for 2 mins. Drizzle the chocolate peanut butter sauce over the pretzels with a spoon. Freeze for 1 hour or overnight (longer the better)



*Notes & Substitutions


You can play around with quantities in this recipe, as doing so won’t influence taste too drastically. Measurements should reflect your taste desires and preferences! Amount of yogurt will depend on how covered you prefer your pretzels to be. Type of yogurt could reflect your taste/texture preferences. For example, using greek yogurt or flavoured Skyr will achieve a thicker pretzel, calling for longer freezer time and an altered taste but also, in this case, added protein. Use any chocolate you like (milk, dark, semi-sweet, white, etc.) and melt it with another cooking fat, like butter, if preferred over coconut oil.

Make this your own, I’m just giving you the skeleton, a base formula & a direction for an awesome and relatively clean snack!
